Eat your greens and beans every day we're told by doctors and nutrition experts. And, plant-based salads are a great way to make that happen. Broccoli and cabbage are part of the list as are kale, spinach, and chard. Add them to any recipe, even if they're not included. I've tried to do that with most of these recipes such as Broccoli Waldorf Salad with Beans or Macaroni Salad with Broccoli.
