Pizza Soup Ingredients

These are the ingredients you’ll need to make this pizza soup recipe: 

  • Meat: This meaty pizza soup features sliced pepperoni (crisped and served on top) and bulk Italian sausage (in the soup itself).
  • Fresh produce: From the produce section, you’ll need an onion and a green bell pepper.
  • Canned tomatoes: Canned diced tomatoes and canned tomato sauce give the soup a rich, flavorful base. 
  • Broth: Use store-bought beef broth or make your own at home.
  • Seasoning: Use store-bought Italian seasoning or make your own at home
  • Cheeses: Top each bowl of pizza soup with mozzarella cheese and Parmesan cheese. 

How to Make Pizza Soup

You’ll find the full, step-by-step recipe below — but here’s a brief overview of what you can expect when you make homemade pizza soup: 

  1. Cut the pepperoni slices in half, then crisp them on the stove. Drain on paper towels.
  2. Cook sausage in the same pot until cooked through. 
  3. Add the fresh vegetables and cook until crisp-tender. 
  4. Add the canned tomatoes, broth, and seasoning. Bring to a boil. 
  5. Simmer, covered, for 10 minutes.
  6. Ladle the pizza soup into bowls and top with crisp pepperoni and cheeses.

This recipe was developed in our test kitchen. Check out some tips and tricks from culinary experts that might make the cooking process easier: 

  • If there is a lot of extra grease in your pan after cooking your sausage, remove the sausage from the pan with a slotted spoon to a paper towel lined plate. Carefully wipe out excess grease in the pan with another paper towel. Return the meat to the pan and continue cooking as directed.
  • You can substitute ground beef for Italian sausage, if you like. Just increase the Italian seasoning to one tablespoon. 
  • Our test kitchen experts recommend serving this soup topped with homemade Parmesan croutons (see the tip below for instructions). If you don’t make the croutons, consider pairing the dish with toasted garlic bread
  • Recipe tester Kathryn Hendrix says you can make the soup even heartier by adding orzo or another small pasta. If you do add dry pasta, make sure to add extra liquid. 

Recipe Tip

To make Parmesan croutons:

  1. Preheat the oven to 300 degrees F. 
  2. Toss 2 cups of ¾-inch-thick bread cubes with 2 tablespoons grated Parmesan cheese, 2 tablespoons. melted butter, and 1 clove garlic, minced. Stir to coat. 
  3. Spread bread pieces in a single layer in a shallow baking pan. 
  4. Bake for 15 to 20 minutes or until croutons are golden brown. 
  5. Cool completely (croutons will get crisp on standing). 
  6. If desired, store in an airtight container at room temperature up to 24 hours.

Ingredients

  • 1 (3 1/2 ounce) package sliced pepperoni

  • 1 pound bulk Italian sausage

  • 1 cup chopped onion

  • 1 green bell pepper, seeded and chopped

  • 1 (28 ounce) can diced tomatoes, undrained

  • 1 (15-ounce) can tomato sauce

  • 2 cups beef broth

  • 2 teaspoons dried Italian seasoning, crushed

  • 1 cup shredded mozzarella cheese

  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Gather all ingredients.

  3. Cook pepperoni in a 6-quart soup pot over medium-high heat until pepperoni starts to crisp, stirring occasionally, about 5 minutes.

  4. Remove pepperoni from pan and drain on paper towels. Set aside.

  5. In the same pot, cook sausage over medium-high heat until cooked through, about 5 minutes.

  6. Add onion and peppers; cook until crisp-tender, stirring occasionally, about 5 minutes.

  7. Add tomatoes, tomato sauce, beef broth and Italian seasoning to the pot. Bring mixture to boiling over medium high heat. Reduce heat and simmer, covered, for 10 minutes, stirring occasionally.
